Mum Cooks I Blog

So proud to say I've started this new blog/Facebook page with my mum & in a way for her, to showcase her Thermomixing passion. 

Since I joined her as a TMX consultant we've been brought closer together through this journey, despite the facts that we live on opposite sides of the country. 

Funnily...
She's a brilliant cook, whilst I am a real newbie. 
She cooks Eastern/asian food mainly, whereas I cook mostly western.
She lives in Western Australia, and I'm on the East Coast.
She's been a consultant for a few years, compared to my few months.

We would love to have you join us  whether you own a thermomix, want to eat healthy or love Asian food, there's something for everyone.

Not to mention Mum is pretty excited about having a Facebook page, 
though I often have to remind her how to log into it! ;)

Thursday TMX Love: Smooth{ie} moments

With preparation for and the retreat on the weekend, it hasn't been much of a TMX love week. 
More so, regrouping and playing catch up.

However, after the big day I was inspired to rewrite my "I love myself enough to..." list which so happens to include my morning smoothies. So it's been a smoothie kinda week

There is no recipe for these, though you can definitely tell when they have beetroot in them ;)

My general rule of thumb for smoothies is 2 fruit to 5 veg.
There may be a better rule, but for me it is about getting the raw goodness anyway I can

I usually add warm water so it's not so cold, and in the future I plan to get a bit more adventurous with the nuts and seeds.

And when it's too cold for smoothies {and you have a tonne of veggies in the fridge to use up}
... it's soup time.

I love my TMX for soups, I basically pop all the veg I want in the bowl, with some of the TMX vegetable concentrate and boiled water. I then set it for 15mins/100temp/Speed 1 and walk away!

That's the bit I love the most....the "Walk away"!!!

I often forget all about it until the beeps call me back to let me know my meal is ready ;)

The soup pictured is pumpkin/veggie soup {this time it included carrot and celery} with coriander, nutmeg & paprika. 
It's a winner every time.

And yes, I am a vegemite with avocado on rice cakes girl. This time around with a bit of parmesan cheese on top ;)

So for accountability sake, I'm putting it out there that this week I will try another Paleo style bread and my second attempt at homemade yoghurt.

Thursday TMX Love

So what's TMX, I hear you say?
It's a Thermomix. 
The world's smallest smartest kitchen. 

To be honest, I've not really the kitchen type. 
I've never been confident in the kitchen, despite my mum being a fantastic cook, but this doesn't mean I didn't want to be. 
When she started promoting TMXs, I had absolutely no idea what it was, but I was super happy to hear she had found something she was passionate about that came naturally to her.

So I kind of got a TMX by default. 
I could see the potential in it, I was using it every day for soups and smoothies, and I could finally say "I can cook risotto."
But I still wasn't making the most out of it.

Hence, the birth of ...
Thursday TMX Love!!!

Every Thursday I will share with you what I have been making in my TMX each week.
This will help to motivate me to try some new things and keep me accountable ;)

So this week's TMX love....

Top Left: This was my first attempt at CADA from the TMX Everyday Cookbook {EDC} this morning. 
A fresh easy breakfast whipped up in under 5 minutes and delicious topped with yoghurt. 
{I did make my own yoghurt from the EDC, but it wasn't as creamy as I like, so I froze it for smoothies instead}

Top Right: Is the All Natural Low Carb Gluten Free Bread. {the link I had no longer works so I will post recipe soon}
Another super easy and delicious recipe. It was done within an hour.

Bottom Left: These are my Fruit and Nut truffles {aka Bliss Balls}
Everyone has their own version of these, so you can experiment.
The very first {very amateur} Pocket Yogini TV video I ever made explains the process but you'll notice I was using my old "pocket yogini" sized processor. Though I'm not sure why it took me so long to try it out in the TMX when it now takes an easy 10 seconds. If you care to, you can watch the video here, but please forgive the less than professional editing ;)

And finally, Bottom Right: My very first attempt at Pesto from the EDC.
This was whipped up in under 30secs, until I realised I added the oil too early. Oops.
But the recipe was very forgiving and it still turned out "imperfectly" perfect.
I've been enjoying a generous spread of it on my gluten free bread topped with avocado for breakfast!
I even got a little experimental and swapped half the pine nuts for cashews and when I do it again I think I'm going to give the awesome recipe I found on The Whole Pantry App a go.

I have to say the TMX is actually inspiring me to be in the kitchen, as you can probably tell by all my "first attempts". 
So I am looking forward to sharing more with you next week.
